2 tsp butter2 stalks of celery, chopped1 small onion, chopped1 carrot, peeled & chopped2 cloves of garlic, mincedEight cups rooster broththree cups water1 small Parmigiano Reggiano Rind, optionally available18 oz spinach cheese tortellinihalf of tsp contemporary floor pepperhalf of tsp floor nutmeg2 cups child spinachsalt to styleParmigiano Reggiano, grated (optionally available)

In a big pot, soften the butter over medium-low warmth.

When melted, add the celery, onion, carrot & garlic.
